Chicken Fajita Chowder

(All the Ingredients Needed!)

PREP TIME:  15 Min.     COOK TIME:  45 Min.

Ingredients:

1 lb. boneless skinless chicken breasts (I used 3 breasts) 
1 each medium sweet red & yellow peppers (you can add green as well) 
1 medium yellow onion
2 tablespoons olive oil
3 cups water
2 cups frozen yellow corn
1 cup uncooked brown rice (I used one boiling bag) 
1 cup salsa verde (can use green enchilada sauce)
1/4 cup chopped green chilies
1/4 teaspoon salt
1 cup (4 oz) shredded Fiesta Blend Cheese
1 cup (8 oz) plain Greek yogurt  


LET'S START COOKING! 

  • 1st chop up the peppers & onions.  Combine them in a bowl.

 
  • Chop the chicken breasts.  (it's easiest if you have kitchen scissors!)
  • In a large pot (which you have a lid for), COOK and STIR the chicken, peppers & onions in olive oil until vegetables are tender-crisp.
  • STIR in the water, corn, rice, salsa verde, green chilies & salt.  Bring to a BOIL.
 
  • REDUCE heat; cover & SIMMER for 35-40 mins. (make sure rice is tender)
  • REMOVE from heat.
  • STIR in cheese & yogurt until cheese is melted.    
 
 
 
Serve with Chips, Crackers or Enjoy it Alone!
