Mini Banana Nut Bread




PREP:  15 Minutes  BAKE:  50 Minutes + Cooling

Ingredients:
3 tablespoons Butter Flavored Shortening
1/3 cup Sugar
1 Egg
1/4 teaspoon Vanilla Extract
2/3 cup All-Purpose Flour
1/4 teaspoon Baking Soda
1/8 teaspoon Salt
1 Large Ripe Banana (mashed)
3 tablespoons Chopped Pecans

Substitutions:
Original Shortening (to replace Butter Flavored Shortening)
Pecans (to replace Walnuts)

Other Items Needed:
Small Bowl
Hand Mixer
5-3/4-in. x 3-in. x 2-in. Loaf Pan
Cooking Spray
Toothpick(s)
Wire Rack (optional)

Let's Start Baking Y'all!


  • Preheat oven to 325 degrees.
  • In a small bowl, CREAM the Shortening & Sugar. 
 
  • COMBINE the Flour, Baking Soda & Salt.
  • ADD to creamed mixture alternately with Banana.
 
  • FOLD in Pecans.
 
  • TRANSFER to a 5-3/4-in. x 3-in. x 2-in loaf pan coated with cooking spray.
  • BAKE at 325 degrees for 50-55 minutes or until a toothpick inserted near the center comes out clean.
 
  • COOL for 10 minutes before removing from pan to a wire rack to cool completely.
 
 
Makes 8 Servings
 
This dish was made with items I already had in the pantry, and is a staple in any Southern household!
