Ribbon Nut Bread





PREP25 Minutes  BAKE:  55 Minutes + Cooling

  
Ingredients:
1 package Neufchatel Cheese - softened (8 oz.)
2/3 cup Sugar - divided
3 Eggs
2 cups All-Purpose Flour
1/3 cup packed Brown Sugar
1 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 cup Almond Milk
1/2 cup Corn Oil
1 teaspoon grated Lemon Peel
1 cup chopped Walnuts

Other Items Needed:
Small Bowl
Hand Mixer
Large Bowl
Whisk
Cooking Spray
9-in x 5-in Loaf Pan
Toothpick (optional)
Wire Rack (optional)

Lets Start Baking this Perfect Autumn Treat


  • Preheat your oven to 350 degrees.
  • In a small bowl, BEAT Neufchatel Cheese & 1/3 cup of Sugar.
 
  • BEAT in 1 Egg.
  • Set aside
 
  • In a Large Bowl, COMBINE the Flour, 1/3 cup of Sugar, the Brown Sugar, Baking Soda & Salt.
 
  • WHISK the 2 remaining Eggs, Almond Milk, Corn Oil & Lemon Peel.
 
  • STIR into Dry Ingredients, just until moistened.
 
  • FOLD in Walnuts.
 
  • SPOON 1 cup of Batter into a greased 9-in. x 5-in. Loaf Pan.
 
  • SPREAD Cheese Mixture evenly over Batter.
 
  • TOP with remaining Batter, carefully spreading to cover.
  • BAKE at 350 degrees for 55-60 minutes or until a toothpick inserted near the center comes out clean.
 
  • COOL Bread for 10 minutes before removing from pan to a Wire Rack.
  
 Store Leftovers in the Refrigerator 
 
 
Makes 1 Loaf (16 Slices)
