Mushroom & Zucchini Pesto Saute




PREP/TOTAL TIME:  10 Minutes

Ingredients:
1 tablespoon + 1 teaspoon Extra Light Olive Oil
1 pound sliced fresh Mushrooms
1 medium Onion (chopped)
3 medium Zucchini (cut into 1/4 inch slices)
6 tablespoons prepared Pesto
1/2 teaspoon Lemon-Pepper Seasoning

Other Items Needed:
Large Skillet

Quick & Easy Side Dish!


  • In a large skillet, HEAT Oil over medium-high heat.
  • ADD Mushrooms & Onion.
  • COOK & STIR for 2 minutes.
  • ADD Zucchini.
  • COOK & STIR until vegetables are tender.
  • STIR in Pesto & Lemon-Pepper Seasoning.


 

MAKES: 8 Servings


This is a perfect dish to whip up in a hurry & will always please a crowd!


*  You can use any type of Olive Oil in this recipe.  Extra Virgin is the highest grade of Olive Oil, but for this recipe it isn't necessary to use.  Light Olive Oil has the same caloric & fat content as other Olives Oils, but typically has less color & taste.  Since we aren't using this to add flavor, Extra Light is perfectly fine.
